I am Javier Peñalver Honrubia, chef and founder of Cheesecake BCN. I have been trained in kitchens such as StreetXO London (Dabiz Muñoz) and Arzak (Juan Mari Arzak), and I've been executive chef of the first team of RCD Espanyol.
I apply everything I have learned here, in every cheesecake we make. I look for perfect texture, real flavour and a quality that is noticeable from the first bite. There are no shortcuts: just technique, fresh produce and a daily obsession to do things right.
